Cut down my FB friends list


It’s not FUN, but i have to.

Time to cut the list…. I just deleted  275 people on my Facebook friends list. I have no idea who they are and yet they ended up on my list,   I probably hit “ACCEPT” or “CONFIRM” without even looking at their profile. Some…. i know, but i chose to remove them for some reasons.

It’s nothing personal. I have been deleted too (few times),  but i did not take it seriously. Yeah, sometimes i got puzzled what I did wrong to offend them, but then again – all i did was move on.. Duh? There’s life outside Facebook.

Ginataang Manok (Chicken in Coconut Milk)


This is a simple Filipino dish where chicken is cooked/stewed in coconut milk w/ spices and vegetables.

INGREDIENTS:

250g chicken (cut in serving sizes)
1 1/2 cups coconut milk (first squeeze)
2 cups coconut milk (2nd squeeze)
1 medium papaya (green), cubed (big)
1 bunch kangkong
4 gloves garlic
1 big onion
1 small ginger, julienned
5 long green chili
4 stalks onion leaves
2 tsp olive oil (or any cooking oil)
Salt and pepper to taste

PROCEDURE:

1. Heat cooking oil in a casserole, saute the ginger, garlic and onion.

2. Add the chicken, sprinkle with salt and pepper then cook in a low fire until it turns light brown.

3. Pour in the coconut milk (2nd squeeze) bring to boil. Let it simmer until the chicken is tender.

4. Add the green papaya and long green chili. Cook for 3 minutes in medium fire.

5. Pour in the coconut milk (1st squeeze), stir and let it boil for 2 minutes. Adjust the taste, add more salt if necessary.

6. Put the kangkong and onion leaves, simmer for 1 minute. Turn off the heat, do not cover the casserole. Transfer to a serving bowl.

7. Serve Hot with plain rice.

Yesterday Thoughts


* Water is life, no doubt! Save water and save life. 😛

* Knowing how to deal with annoying people is helpful. It’s just that sometimes i have low tolerance  for annoying people.

* Shower before work is always necessary (for me).   No water? it’s OK to be late , just inform your boss! A person who can’t get going without water understands, for those who don’t care about hygiene find it a peculiar & funny excuse.!

* I don’t mind travelling outside the city everyday to work as long as there’s free transportation (of course).

* I was trained to drive in Mussafah (Abu Dhabi’s industrial area) b4 i got my D/L but  seeing the huge track around gave me second thoughts if i should drive there. Scary road! The plan of visiting my ex-colleagues working there might never happen.

* Feels good to be surprised sometimes. Facing two persons you don’t know and asked questions you least expect is thought-provoking!

* Telling the cab driver to drive fast is not advisable. I regret telling the driver to drive fast because i was so late, he was driving irresponsibly. But thankful he listened when i said “slow down”. I realized, I was already late, no need to hurry.

* Interview  is not always “Why do you want to leave your current job?” ,  “Tell me about your work,”  blah blah blah.

Mad Monday


I know now how it feels to live without water. This is not Philippines, where you can easily ask from neighbors or get from a deep well.

I woke up this morning and found out there’s no water in the villa. Worst is…..i have my period, yeah my period! Imagine? In my 6++ years here in Abu Dhabi, this is the first time it happens.

Last night, before i went to sleep, i saved water in a bucket for my hair today. But it’s not enough.

I did not get out of the bed when i found out we have no water. I feel weak. Who likes to go to the office without taking a shower? My stomach was rumbling, making ‘some’ noise. Grrrr! But no water in the toilet. Headache striked due to the delay in toilet use.

I went to the office almost 12NN, Was supposed to take the day off, but my boss called at 8:15 am which is so unusual. So i worked.

At around 5PM, my hubby called he can’t prepare for dinner because there’s still no water. More than 5 hours without water is not easy! We decided to eat outside and we bought a bigger bucket to be prepared for any situation like this. ( but not again, please)

When we reached home, we went to our neighbors (Filipinos) to ask for water. Yeah! Unbelievable doing it in Abu Dhabi, but we did! I have no idea what happened, only our villa has no water. The Emirati owner sent someone to fix but unfortunately not done yet.

I hope to wake up tomorrow with the sound of water.! 😀

Today Thoughts


* it is great having a ME DAY every Saturday.

* it is good to clean the room w/o my hubby around. :p

* conversation over coffee is always fun and interesting.

* after a relevation from a friend, i am extremely grateful with my work.

* not all big and stable companies give high salary. No wonder they became so big.

* searching for a job is not easy, it’s important not to give up.

* it’s good to be friends with my daughter’s former classmates. Seeing them smiling at me is happiness. Not all her former classmates were nice but she had the most wonderful friends here in Abu Dhabi. 3 of them are my favorite.

* i’m grateful there’s Spinney’s selling pork and any other stuff not available in other shops.

* i should understand that my daughter is not always available even on her free time to chat with me.

* i miss my family back home.

Chicken & Vegetable Stir-fry with Tofu


Ingredients:

200 g chicken, cut into bite-sized
150 g tofu, cut into cubes
2 nos. marrow or courgette, cut into thin rounds
1 big carrot, cut into thin rounds
100 g green beans
100 g broccoli
15 nos. mangetouts
1 no. bell pepper (red, yellow or green)
3 gloves garlic, crushed
1 medium onion, finely sliced
1 tsp. finely sliced ginger
Salt & black pepper
2 small pack of Ginisa mix
Sesame oil
Olive oil
Sunflower oil

Procedure:

1. Put the chicken in a bowl and add black pepper, salt and half of the small pack of Ginisa mix. Mix thoroughly. Set aside.

2. In a pan or wok, heat the oil and fry the tofu over a medium heat until golden brown. Remove and set aside.

3. On the same pan, add a little more oil, stir-fry the chicken until golden brown. Remove from the pan.

4. Clean the pan or get a new one, add olive oil. Sauté ginger, garlic and onion. Put the chicken, mix with the spices for a minute.

5. Add the carrots, then courgettes, and green beans. Mix and cook for 2 minutes.

6. Add the broccoli, mangetouts and bell pepper. Put the remaining 1 1/2 pack of Ginisa mix, add a teaspoon of sesame oil. STIR for 2-3 minutes. Adjust the taste , add more salt and pepper if necessary. Do not overcook the vegetables.

7. Put and mix the tofu for 30 seconds. Turn off the heat.

8. Serve with plain rice.

Last Night Thoughts


* why it’s difficult for me to learn how to swim? yeah, it’s too late.

* grateful that there’s WEEKEND

* swimming is happiness for my daughter, wish she was with us last night!

* Drinking beer is fine. 😛 . Will I be drunk with a glass of beer?

* gonna enroll Icy to a swimming class (on summer)

Today Thoughts


* I miss my daughter back home..

* Isn’t it crazy if someone makes a fake account on FB of a ‘new boyfriend’ who actually doesn’t exist just to show the X that she has moved on.? It’s like.. in a relationship with _________ a ghost?

* Anything with chocolate is heaven for me.

* I wonder if the brown rice I bought is really brown rice. The price’s almost the same with the white rice.

* Grateful with technology (always). What if there’s no Internet connection? A day like today when I was not into a lot of things, Internet helps kill boredom.

* Watching good movies is happiness.

* Keira Knightley is flat-chested. It’s ok! A turn-off for men? I don’t think so, she succeed in the show business with small b**bs. (watched Last Night today)

* Life is so unfair sometimes. A friend sent an email telling me she’s upset to find out that her Band No. (grade) has not been increased yet other employees who came after her has been given.
